Easy French Sablés Cookies for Tea
A few days ago, I made some Sablés Nantais. They are small, round, and crumbly biscuits from Nantes, France. They are made with simple ingredients: salted butter, sugar, flour, and sometimes a bit of milk or egg. Their texture is melt-in-the-mouth thanks to the salted butter, and they have a delicate sweetness. These biscuits are perfect to enjoy with coffee or tea. I always have a plenty jar with some fresh homemade cookies for my coffee or tea! Do you want to try them 🙂
Ingredients:
- 250g flour
- 140g cold salted butter
- 120g caster sugar
- 1 egg (beaten)
- 1 egg yolk (for brushing)
Method:
- In a bowl, mix the flour, cold salted butter, and caster sugar.
- Rub the mixture between your fingers until it has a sandy texture.
- Add the beaten egg and mix until the dough comes together. Do not add baking powder.
- Roll out the dough to a 3mm thickness and cut out circles using a cookie cutter of your choice.
- Place the circles on a baking tray lined with parchment paper.
- Brush the cookies with egg yolk, then use a fork to create a crisscross pattern on top.
- Bake at 180°C for 30 minutes, or until golden brown.
- Let them cool before enjoying with a cup of tea!

In loubia recipe it says to soak beans overnight overnight. In 2nd part it says add 4cups (or maybe more) water and beans. Does this get done separately so as not to lose the spices/flavor intensity ? Thank you.
