Saffron and Pistachio Poached Pears

A delicious dessert for today full of aroma  refers to a dessert where pears are gently simmered in a saffron-infused syrup, often sweetened with sugar or honey, and garnished with chopped pistachios. The saffron adds a rich, golden and a subtle, floral aroma, while the pistachios provide a crunchy texture and nutty flavor contrast. This version of poached pears is particularly popular in Middle Eastern and Persian-inspired cuisine.

Serves 2

Ingredients:

  • 1 liter of water
  • 3 firm pears (Conference for me)
  • 500 g of sugar
  • A pinch of saffron threads
  • Pistachios
  • Rose buds

Method:

  • Peel the pears, leaving the stems intact for a refined appearance.
  • Trim the base slightly if needed so they can stand upright.
  • Rub them with a bit of lemon juice to prevent browning.
  • In a saucepan, combine the water, sugar and the saffron.
  • Bring to a boil over medium heat until the sugar is completely dissolved.
  • Gently place the pears into the simmering syrup.
  • Cover with a lid to ensure the pears are fully submerged.
  • Cook on low heat for 20 to 30 minutes, depending on the size and ripeness of the pears.
  • They should be tender but still hold their shape.
  • Carefully remove the pears and place them on a serving dish.
  • Allow the syrup to cool slightly before serving.

Arrange the pears on individual plates and drizzle with the syrup. Sprinkle with some crushed pistachios, and for an elegant touch, add a few rose petals.

The pears are melt-in-your-mouth tender, and the delicate flavors of the saffron syrup add a sublime touch to this simple dessert.
