Beignets aux Amandes

Last week, I missed Fiesta Friday. I was so busy, I received my lovely niece for a few days. I like receiving my relatives because I love rediscovering my Dubaï!

February is usually the Carnaval Month in a lot of places in the world, and so, for this festive month (and for Fiesta Friday #55) I made for you some Beignets aux Amandes. It’s an easy and simple recipe that I hope you will like and can enjoy with me. Thank you, Angie from The Novice Gardener for animating this fabulous weekly party.

The recipe is inspired by Les produits laitiers!

Serves: 20 Beignets

Ingredients:

  • 100g of melted butter
  • 4 eggs
  • 200g of caster sugar
  • A pinch of salt
  • 120g of almond powder
  • 400g of flour
  • Zest of 1 lemon
  • Sunflower oil for frying
  • Icing sugar or caster sugar for dusting

Procedure: Easy

  1. In a large bowl add the 4 eggs.
  2. Start to whisk energetically.
  3. Add the sugar, the pinch of salt, the almond powder and the zest of one lemon.
  4. Continue to whisk.
  5. Add the melted butter and finally the flour.
  6. You obtain a kind of sticky dough (as seen in the picture).
  7. Cover the bowl with a clean kitchen towel and set aside for 1 hour.
  8. After 1 hour, in a large deep pan heat the oil.
  9. Remove the dough and make a long roll (of 1.5 cm wide)
  10. Cut small sticks of 10 centimeters.
  11. Pinch the ends.
  12. Fry the small beignets.
  13. Remove when they are golden brown and put them in a colander.
  14. Proceed the same way for the rest of the dough and allow to cool for 30 minutes.
  15. Roll the beignets into the icing sugar or the caster sugar.

I suggest you to serve the beignets with a good coffee. They are really nice, sweet and zesty. The texture depends on the size of the beignets.

PS: You can add cinnamon, orange or lemon Zest’s and also a few drops of orange blossom water.
