Fluffy Spinach and Goat Cheese Buns Recipe


If you’re looking for savoury buns that are soft, fluffy, and full of flavour, this recipe is perfect for you. The dough is light and easy to work with, and the spinach and goat feta cheese filling adds a delicious, comforting twist. These buns are great for lunch, brunch, or as a snack with tea.


Ingredients for the dough:

  • 250 ml warm milk
  • 18g fresh yeast
  • 1 tbsp sugar
  • 1 egg, at room temperature
  • 80 g melted butter (cooled slightly)
  • 450–500 g flour (start with 450 g and add if needed)
  • Salt

Method:

  1. In the mixing bowl of the stand mixer add the flour and the sugar.
  2. In the middle, add 1 whisked egg.
  3. On one side add the fresh yeast, and on the other side add the salt (never add the yeast beside the salt).
  4. Start to mix the all the ingredients with the hook of your stand mixer on a medium speed (during 5 minutes).
  5. Pour the milk slowly.
  6. Add the butter (cut into small cubes) and mix on a high speed until the dough becomes soft and detaches from the bowl (about 10 minutes or more depending on the mixing bowl).
  7. Transfer the dough into a floured bowl.
  8. Cover with a plastic wrap and set aside for 1 hour.
  9. After 1 hour, punch down to deflate dough completely.

Ingredients for the filling:

  1. 500g of fresh spinach
  2. 1 chopped onion
  3. 2 tbsp of extra virgin olive oil
  4. Juice of half lemon
  5. Pinch of sumac
  6. Salt and pepper
  7. 250g of goat feta cheese
  8. Some Nigella seeds

Method:

  1. Heat the olive oil in a pan.
  2. Add the onion and cook until soft.
  3. Add the spinach , cook until all moisture gone.
  4. Season with salt, pepper and sumac.
  5. Add the half of lemon juice (mix).
  6. Finally the goat feta cheese on the top.

Final step:

  1. Punch down the dough
  2. Flour a clean surface.
  3. Roll it, into a rectangle about 30×40 cm.
  4. Spread the filling evenly over the surface.
  5. Starting from the long edge, roll the dough tightly into a log.
  6. Cut into 10 or 12 equal pieces using a sharp knife, 2 or 3 cm wide.
  7. Place the rolls in a baking pan, lined with parchment paper.
  8. Brush the surface with 1 egg yolk and sprinkle some Nigella seeds on the top.
  9. Cover and let the dough rise for 30mn.
  10. Bake at 180C degrees for 25 minutes, until lightly golden.
  11. Remove and allow to cool.
