Transform Leftover Brioche into Cozy Pudding


Yesterday, I made a Brioche Pudding for the family, a baked dessert made from leftover brioche (or bread) soaked in a mixture of milk, eggs, and sugar. The Brioche absorbs the custard, and once baked, it becomes soft inside with a golden top. Brioche gives a richer texture, but any kind of bread works. It’s a great way to avoid waste and enjoy a cozy, homemade treat.

This is one of those desserts that feels like home (my grandma house in Algiers). A way to use old Brioche and turn it into something soft, warm, and full of comfort. I added a classic French touch with a crème anglaise on the side. Nothing fancy, just simple ingredients and a recipe that always works.


Ingredients:

  • 500 g day-old  brioche, or bread cut into cubes
  • 500 g milk 
  • 500 g half cream
  • 3 eggs 
  • 100 g caster sugar (or less, to taste)
  • 1 tsp vanilla extract
  • A pinch of salt
  • 80 g raisins, nuts, or chocolate chips (optional)
  • Butter for greasing the dish

Method:

  1. Preheat your oven to 175°C (350°F).
  2. Butter a deep medium baking dish.
  3. Place the brioche cubes in the dish.
  4. In a bowl, whisk together the milk, the cream, eggs, sugar, vanilla, and salt.
  5. Pour the mixture over the bread.
  6. Press gently so the brioche soaks it up.
  7. Let it sit for 10–15 minutes if the brioche is very dry.
  8. Bake for 45 minutes, until the top is golden and the center is set.
  9. Let it cool a bit before serving.
  10. It’s delicious warm, with or without crème anglaise.
